Dear family,

Once our Holy Mother, Shri Lakshmi Herself, prepared complete menus, made with the intention of pleasing Her children and making them satisfied.

During this special online edition of the Shri Adi Shakti Puja 2020, we are thankful to our brothers and sisters who were willing to share some special recipes with all of us. Just like Shri Mataji, they all added a very special ingredient called LOVE.

Sambar

• 4-5 tbsp oil
• 1/2 tbsp mustard seeds
• 1/2 tbsp cumin seeds (Jeera)
• 1/2 tbsp asafoetida (Hing)
• 2-3 pieces of red chillies
• 5-6 curry leaves
• 4 tbsp of tamarind pulp – soak tamarind in water for 5 mins & remove seeds before use
• 1 tbsp of jaggery powder

Vegetables & others
• 1 Onion – cut into slices
• 1 tomato – cut into cubes
• 1 Potato – boiled & cut in cubes
• 2 drumsticks cut in medium pieces & boiled for 4 -5 mins

Other Spices
• 1/2 tbsp turmeric powder(haldi)
• 2 tbsp sambar powder – MTR brand Sambar powder is good

If there is no sambar powder, add:
• 1 tbsp red chilli powder
• 1/2 tbsp cumin powder(jeera powder)
• 1 tbsp coriander powder(dhania powder)
1 cup tur dal or mung dal

Chai

Liquid
• Water
• Milk

Spices
• Fresh ginger
• Cinnamon Sticks
• Black pepper
• Cloves
• Cardamom
• Sugar (jaggery)

Creme Caramel

• 125 gr brown or white sugar
• 50 gr butter
• 20 cl cream

Safron Chicken

• Chicken: 1.5 kgs
• Onions: 2 big
• Tomatoes: 4
• Boil Onions paste (3 onions)
• Garlic Ginger paste 1 tb spoon
• Cashew nuts: 100 gms
• Saffron: 1 tb spoon
• Cinnamon sticks: 2
• Bay leaves: 2
• Cloves: 4-5
• Black pepper: 4-5
• Star Anis: 3
• Cumin seeds: 1 tbspoon
• Green Cardamone: 5
• Black Cardamone: 2
• Coriander powder: 2 teaspoons
• Haldi – Turmeric powder: 1 teaspoon
• Cumin powder: 1 and ½ teaspoon
• Kashmiri Red Chili powder: 1 teaspoon
• Garam Masala: 2 teaspoons
• Green Coriander
• Coconut cream ½ pc
• Fresh cream: 250 gms
• Coconut milk: 400 gms
• Ghee: 2 tb spoon
• Yoghurt: 5 tb spoon
• Oil: 2 tb spoon
• Salt : as per taste

Salad with cooked eggplant, chickpeas and lentils

• 1 large cup of boiled chickpeas
• 1 large cup of boiled lentils
• 2 eggplants
• 1 handful of coriander and leaf parsley 1⁄2 red chili pepper
• 1 handful of pomegranate seeds Roasted sesame oil
• Grilled sesame seeds (optional)

Waterzooi of fish

• 200 g of monkfish
• 200 g of cod
• 200 g of salmon
• 4 white young leeks
• 1 bunch of young onions
• 5 young carrots
• 3 potatoes
• Some parsley stalks
• A few sprigs of dill
• 1 lemon
• A little saffron
• A little fresh cream
• 2 liters of fish broth

Sweet Indian Gujiya (Prasad)

• All purpose flour
• Cow’s Ghee (Clarified Butter)
• Luke Warm Water
• Dry Fruits ( Almonds, Cashews, Pistachios or any other as per choice)
• Desiccated Coconut
• Sugar
• Milk Powder
• Milk (preferably whole milk)
• Cardamom Powder (Green)
• Nutmeg Powder (has a strong aroma & adds a subtler taste to the mixture)

Salty Indian Mathri (Prasad)

• All Purpose Flour
• Cow Ghee (or any other edible oil of your choice)
• Luke Warm Water
• Carom Seeds
• Dry Fenugreek Leaves
• Salt
• Crushed Pepper Corns
• Paprika Powder
• Dry Mango Powder
• Coriander Powder
• Cumin Powder
• Semolina

How to make Coriander/Cumin Powder?

1. Dry roast some Coriander / Cumin seeds by setting a skillet over medium heat
2. Once the seeds cools down to room temperature grind those to powder state.
